Amazing!! – Why is there not more Vegan pies???


I stumbled upon a really simple way to make vegan mince, and it happened to taste like the perfect recipe for a pie filling:

Can you believe there is not one piece of dead animal in that gorgeous photo? .. and, yes it does taste as good as it looks!

So, without further ado:

Easy Vegan Mince

3 Tbsp cooking oil
1/2 medium onion, diced
1 tsp garlic granules
1/4 medium red capsicum, diced
5 medium-small mushrooms, diced or sliced

Fry covered on low-medium heat & stir occasionally, until mushrooms & onions are soft (about 8-10 mins). Then add:

1 cup TVP mince (dried granules)

Stir to get flavours/oil into TVP, then add:

1 medium tomato, chopped
3 tsp mustard powder
3 Tbsp nutritional yeast
13/4 cup water
1/2 cube Massel vegan chicken stock
4 dried birdseye chillies

Mix, simmer covered on low heat until water is absorbed.

Yes, the pastry is vegan too, and it’s easier than you might think!

Vegan Shortcrust Pastry (does not use margarine!)

21/4 cups plain flour
3/4 tsp baking powder
1/4 tsp salt

Sieve & mix together, then add:

6 TBSP cooking oil, rubbed in evenly, then add:

6-8 TBSP aquafaba (the water from a can of chickpeas or beans)

Form into a dough, but don’t knead it.

Chill in the fridge for 15 mins before rolling it.
